INGREDIENTS

Orange Cake 

  • 2 Cup Inspiration Baking-All Purpose Flour Blend

  • 1/2 Cup Tapioca Flour/Starch

  • 2 Teaspoon Baking Powder Double-Acting

  • 6 Tablespoons Softened Butter or Margarine

  • 1 1/3 Cup Granulated Sugar

  • 4 Whole Eggs

  • 1 Tablespoon Distilled White Vinegar or White Wine Vinegar

  • 1 Tablespoon Vanilla Extract

  • 1/2 Teaspoon Orange Extract

  • 2 Tablespoon Applesauce, Mayonnaise or Sour Cream

  • 2 Oranges Zested (reserve 1 Tablespoon for Orange Butter Cream frosting)

  • 1/2 Cup Orange Juice

  • 1/2 Cup Milk of Choice (unflavored)

  • Food coloring for orange color

Orange Butter Cream Frosting

  • 8 Ounces Softened Cream Cheese

  • 1/2 Cup Softened Butter

  • 4 Cups Powdered Sugar

  • 1/2 Teaspoon Vanilla Extract

  • 1/4 Teaspoon Orange Extract

  • 1 Tablespoon Orange Zest

DIRECTIONS

Orange Cake

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.

  2. Combine dry ingredients together except granulated sugar, whisk and set aside.

  3. Using a hand mixer, beat eggs and sugar together on high until pale and frothy. About 3 minutes. Set aside.

  4. In a separate bowl add all wet ingredients and butter. Blend on low for about 30 seconds. Add the dry ingredients, and blend till combined (it will look like a paste). Slowly add milk and orange juice. Scrape the bowl.

  5. Add eggs and sugar mixture. Blend on medium high until smooth. About 2 minutes

  6. Pour batter into baking pan. Cook 30-35 minutes until a toothpick comes out fairly clean.

  7. Remove from oven and place on a wire rack for 10 minutes. Turn out onto parchment paper to completely cool before frosting. Keep on wire rack while cooling.

  8. Frost cake with the Orange Butter Cream Cheese Frosting

Orange Butter Cream Cheese Frosting

  1. Place cream cheese and butter in the bowl and beat until creamy. It takes about 30 seconds, but you should stop and scrape the sides several times.

  2. Turn the mixer on low and slowly add the powdered sugar, scraping the bowl several times. Add the vanilla, orange extract and orange zest to the butter and cream cheese. Cream together. Then slowly add the powdered sugar. Blend on high until the frosting is light and fluffy (1-2 minutes).

  3. Frost the cake with the Orange Butter Cream Cheese Frosting

Option: Frost the cake with Chocolate Fluffy Frosting.


 
NOTES:
  • If you use a 9" cake pan, bake for 25-30 minutes.

  • Try using three layers.

  • Tint the frosting for color.

  • Add fresh orange slices or candied orange slices for decoration on top.

  • You can also frost the cake with chocolate frosting. It creates a masterpiece, adding amazing flavor to each bite.
