INGREDIENTS
  • 2 1/2 Cups Inspiration Baking-All Purpose Flour Blend 

  • 2 Teaspoons Ground Cinnamon

  • 1/2 Cup Oil

  • 1/2 Cup Applesauce

  • 1/2 Cup Granulated Sugar

  • 1/2 Cup Packed Brown Sugar

  • 1 Tablespoon Vanilla Extract

  • 4-5 (1 1/2 cups) Ripe Bananas

  • 1/2 Teaspoon Baking Soda

  • 1 Cup Chopped Nuts of Choice

DIRECTIONS
  1. Preheat your oven to 350° F.

  2. Using your spray oil or shortening, grease your 9-inch bread loaf pan.

  3. Mash your bananas with 1/2 teaspoon baking soda in a large mixing bowl.

  4. In another mixing bowl, stir together your Inspiration Baking-All Purpose Flour Blend  and cinnamon, then set aside.

  5. In the mixing bowl containing the mashed bananas, combine oil, applesauce, granulated sugar, brown sugar, and vanilla. Stir this mixture by hand or with your hand mixer set on low until well-blended.

  6. Gradually add the Inspiration Baking-All Purpose Flour Blend to the banana mixture, stirring with your wire whisk or hand mixer set on low until well-blended.

  7. If you are using the optional chopped nuts, add them now and stir in by hand with a spoon. OR save them to put on top of your bread!

  8. Pour your dough into the greased loaf pan. Use your spatula to scrape out any remaining dough into the pan.

  9. Put the loaf pan in the oven and bake for 40-50 minutes. Check with a toothpick to see if it's done. The toothpick should come out mostly clean after you insert it in the middle of the loaf.

  10. Remove your Classic Banana Bread from the oven and let it stand for 5 minutes, then remove it from the pan and put it on a wire rack to finish cooling. You can add chopped nuts to the top of the bread.

 
NOTES:
  • If using smaller pans, baking time will be less.

  • Adding 3 whole eggs and omitting the applesauce will yield two loaves.

  • Make muffins. Bake 14-16 minutes.

I love this banana bread recipe. I've used it to make a banana cake, frosted with butter cream cheese frosting. Its so moist.
